Anytime Peach Stuffed French Toast

We are firm believers that there shouldn’t be a designated time of the day to enjoy breakfast foods. We love to eat breakfast for dinner all the time. There is always some kind of fruit in the fridge at home, so why not add it to your dinner. We had some extra peaches, so we thought they would go great for making some stuffed French Toast. This is a really great recipe to make if you want something quick and easy. And because I made mine in the

American Kitchen 12-inch Premium Nonstick Casserole Pan, clean-up was quick and easy too.

This recipe is great because it’s so versatile. The mascarpone cheese can be substituted with cream cheese; the fruit can be peaches, blueberries, strawberries, among many other choices. If you really want to make this a sweet dish, you can use sweet Hawaiian bread. Another great option is to spread fruit on top after it’s cooked.

Anytime Peach Stuffed French Toast
Prep time: 10 minutes
Cook time: 8-12 minutes
Total time: 22 minutes

4 ounces mascarpone cheese (or cream cheese)
1 tablespoon vanilla extract
½ teaspoon cinnamon
8 slices of thick cut bread
2 cups of fresh peaches, diced
6 eggs
2 ½ tablespoons milk
Maple syrup (optional)
Extra powdered sugar (optional)


1. Combine the mascarpone cheese (or cream cheese) with the ¼ cup powdered sugar, vanilla, and cinnamon. Mix thoroughly until you get a smooth mixture.

2. Spread the cheese mixture on half of the bread slices and top each with ½ cup peaches. Top the remaining 4 bread slices with the cheese mixture and press slightly around the edges to seal and form a sandwich.

3. Preheat your American Kitchen 12-inch Premium Nonstick Casserole Pan on med-low heat.

4. In a small bowl, whisk together the eggs and milk. Dip each sandwich in the egg mixture, making sure that all the bread is covered with the mixture.

5. Place each sandwich in the pre-heated Casserole Pan. Cover the pan and cook for 4-6 minutes. Remove cover, flip the sandwich and cook an additional 4-6 minutes or until golden brown on each side. This pan is great to put in the oven to keep your stuffed French toast warm until you are ready serve.

6. Serve with maple syrup and powdered sugar if desired.
