This recipe is a great way to use up the kale, tomatoes, fresh herbs, and garlic from your CSA or garden. You can make this dish entirely with fresh ingredients (if you have them) or some canned vegetables – which is what I did this time. Using pre-cut or canned ingredients can also save prep time and a lot of the chopping. I also added some leftover smoked bratwurst that we had made for a cookout the night before. It gave the whole dish a delicious smoky flavor and extra protein, making it a complete one-pot meal.
