BBQ Spatchcocked Cornish Hens

There is nothing easier than seasoning up a Cornish hen, throwing it into the oven and serving it. This easy recipe gives it a big boost of flavor and changes things up by spatchchcocking the bird instead of serving it whole.

If you’re not sure what spatchcocked means it’s a big word for taking out he backbone and laying the bird flat. The bird has been splayed out and therefore cooks evenly and easier. The whole process requires nothing more than some kitchen shears and 5 minutes of your time.

After you’re done with your bird, place it in the pan, season it and set it to roast. It’s so easy you’ll be doing with all the poultry that enters your house!

BBQ Spatchcocked Cornish Hens

Prep: 20 minutes
Cook: 60 minutes
Total: 80 minutes


2 Cornish hens, spatchcocked
1 tablespoon onion herb salt
1/3 cup BBQ sauce


1. Preheat oven to 375 degrees.

2. Remove the giblets from the Cornish hens and place them on a cutting board, breast side down.

3. Using sharp kitchen shear, cut down each side of the backbone. Starting from the neck end down to the tail. Remove the backbone, pull open the hen, flip it over    then lay it flat.

4. Season the top and underside of the birds with equal amount of onion herb salt.

5. Add the Cornish hens, breast side up, to your American Kitchen Cookware 11x15 cast aluminum bake and roast pan.

6. Place the pan into the oven and bake for 30 minutes, remove and baste the Cornish hens with BBQ sauce.

7. Add back to the oven and bake for about 30 minutes or until the bird registers 160 degrees
