The temperatures are rising throughout and it’s finally time for some of our favorite produce: tomatoes and strawberries! Everybody loves pasta! And this simple recipe is perfect as a side dish with grilled chicken or fish, or serve it as a main course. It is naturally vegetarian and can easily be made Vegan by omitting the parmesan cheese. It also works wonderfully with gluten-free pasta if you’re looking to avoid the wheat.
I’m focusing on the amazing flavors of apples and combining them with some of my favorite spices to create a Spiced Apple Loaf Cake that is perfect any time of day. For breakfast, it’s great slathered with cream cheese; for an afternoon treat, it’s perfect with your coffee; and at the end of the night, serve it up with some peppermint tea for a real treat.
The best part about corn season is that you can buy it cheap and freeze it up to use for the rest of the year. When it’s dirt cheap I cannot pass up the opportunity to stock up. Seriously, if you’re not already doing this, you need to run to the store and get it done! Plus, if you’re lucky you can sometimes find frozen ears of corn right in your stores freezer section.
