Champagne & Asparagus Risotto
Serves 4 | Prep time: 5 minutes | Cook time: 30 minutes
3 cups vegetable or chicken broth
2 tablespoons unsalted butter
1 small onion, chopped
1 garlic clove, minced
1 1/2 cups arborio rice
2 cups champagne
1/2 lemon, juiced and zested
1/3 cup mascarpone cheese
1/2 cup grated parmesan cheese
1/2 pound fresh asparagus, chopped and steamed
salt and pepper, to taste
1. Start by simmering a small pot of broth on a separate burner on the stovetop while heating up your stainless steel sauté pan.
2. Once preheated, sauté the butter, onion, and garlic until translucent. Add the rice and champagne until champagne is fully incorporated, all while stirring.
3. Cook, using a ladle to pour in hot broth frequently into the risotto pan. Stir slowly while liquid is absorbed into rice by adding 1/2 cup increments. The risotto is done when you’ve used all the broth and the rice is creamy and just tender.
4. Quickly add the lemon juice and zest, along with the cheeses and asparagus. Season to taste and serve immediately.
Cook’s tip: Make sure to use great quality champagne, because whatever you don’t use in the risotto is great to sip on while making this recipe!
