Chicken Caprese Garlic Bread


Garlic bread is a classic side dish but we’re taking it from side dish to main course! This garlic bread/French bread pizza mashup is slathered with pesto, layered with a super garlicky chicken and tomato mixture and then topped with homemade mozzarella. You’ll love how easy it is to throw together and while you can use bagged mozzarella we highly recommend getting some fresh mozzarella to really take this dish over the top.

Chicken Caprese Garlic Bread

Yield: 4 servings 


Ingredients:

 
1 large loaf ciabatta bread
1 cup pesto 
2 tablespoons olive oil
1 pound boneless skinless chicken breast, cut into 1 inch chunks
1/2 teaspoon kosher salt 
1/2 teaspoon black pepper 
1/2 teaspoon Italian seasoning 
2 cups halved cherry tomatoes 
4 cloves garlic, minced 
1/2 pound fresh mozzarella cheese, thinly sliced 
Fresh basil, for garnish

Directions:

1. Preheat your oven to 425 degrees and set a nonstick baking sheet aside. 

2. Cut the ciabatta bread in half lengthwise and once more widthwise. This should create 4 pieces of bread.

3. Spread each piece of bread with 1/4 cup pesto and set onto the baking sheet, pesto side facing up.

4. In a 10-inch stainless steel skillet over medium high heat, heat olive oil until hot, then add in the chicken and season with kosher salt, black pepper and Italian seasoning. Cook for a few minutes until the outside starts to get slightly golden. 

5. Add in the tomatoes and garlic and continue cooking until the tomatoes starts to soften and the chicken is fully cooked.

6. Scoop equal amounts of the chicken mixture onto each slice of the bread and top with mozzarella cheese slices.

7. Bake for about 10 minutes or until the mozzarella is melted and lightly brown. 

8. Sprinkle with fresh minced basil for garnish and serve.
