Oven Roasted Cilantro Lime Salmon with Chunky Avocado Salsa

And for those warmer flavors, the slow-cooked butter lime salmon infuses warm savory notes into every single bite. This tasty and quick dinner is the perfect bridge from summer to fall and is sure to satisfy what you’re craving.


Oven Roasted Cilantro Lime Salmon with Chunky Avocado Salsa

Serves 4

Ingredients:

For the avocado salsa:

2 avocados, diced

1 tomato, diced

1 red onion, diced

1 lime, juiced

1/4 cup chopped cilantro

 

For the salmon:

2 pounds salmon filet, whole

1/2 cup chopped fresh cilantro, plus 1/2 bunch cilantro

1/2 stick unsalted butter

1 lime, zested and sliced



Equipment: American Kitchen Nonstick Baking Sheet


Directions:
1. Prepare the avocado salsa by tossing together all the ingredients and seasoning with salt and pepper to taste. Set in the refrigerator to chill.

2. Preheat the oven to 325F. Place the 1/2 bunch of cilantro and lime slices on the bottom of nonstick baking sheet. Place salmon filet on top.

3. In a small bowl, mash the butter, chopped cilantro, and lime zest. Season with salt and pepper.

4. Pat the salmon filet dry with a paper towel and spread the seasoned herb butter mixture on top. Place in oven and slowly roast for 30-50 minutes, depending on thickness of filet.
5. To serve, flake salmon and toss with avocado salsa over fresh greens. Enjoy with an extra squeeze of lime.
