Tater Tot Bacon Breakfast Casserole

Mornings are probably my favorite part of the day. Oddly enough, I’ve grown up to be one of those adults that work best when it’s bright and early, which I doubt the teenage me would be proud of. The thing about mornings is that everything is so fresh and the possibilities are almost endless - especially when we’re talking about breakfast.

As our mothers said, breakfast is the most important meal of the day and it’s not only because it’s the meal that pairs exceptionally well with coffee, but because it’s the meal that kicks off your day, sets the pace for it, and prepares you to take on whatever life brings your way.

But let’s be real, I also need a breakfast that’s simple, tasty, and won’t take up the entire morning to make. Add to that the fact that I only want to dirty one pan - at most, two pans. These are the qualifications for a breakfast dish and I think that my Tater Tot Bacon Breakfast Casserole embodies all those! This recipe is one that you need to keep tucked into your back pocket and pull out whenever you want to treat your family to a delicious breakfast. It’s also great for when you have guests over, as it can be prepped the night before and just put together and baked early morning.

The star of this recipe is the 12-inch Premium Nonstick Casserole Pan because it makes this recipe an (almost) one pan dish - if you don’t count the baking sheet you cook your bacon on! Start by sautéing the aromatic onion and breakfast sausage together. You’ll then proceed to the tater tots, egg mixture, cheese, and bacon. It’s the perfect recipe to get the kids to help you in the kitchen too - they can add things to the pan, stir, and sprinkle cheese and bacon on top!

Packed with everything that makes a delicious breakfast: maple breakfast sausage, crispy bacon, eggs, and potatoes in the form of tater tots (and who doesn’t love tater tots!?), this breakfast casserole is a winner in my book. Plus, since the cleanup is almost none existent since we used a nonstick casserole pan, you can get your day started even happier.

My last piece of advice for this recipe is simple: make it your own! The ratio of tater tots to eggs and milk is just a starting point. Let your creative juices run and create some of your own favorite breakfast combinations, like:
• Bacon, Blue Cheese, and Dried Figs
• Pancetta, Mozzarella, and Cherry Tomatoes
• Chorizo, Manchego Cheese, and Chopped Red Peppers

Tater Tot Bacon Breakfast Casserole
Serves 4-6

1/2 pound bacon
12 ounces maple breakfast sausage, casing removed
1/2 large yellow onion, chopped
2 tablespoons unsalted butter
3 large eggs
1 1/2 cups whole milk
1 1/2 cups shredded cheese
2 pounds (one bag) tater tots
Salt and pepper, to taste

1. Preheat oven to 350°F and bake bacon for 12 minutes or until crispy.

2. While bacon is cooking, sauté the breakfast sausage, onion, and butter together until onions are translucent and sausage is cooked. Make sure to crumble sausage with back of the spoon while it cooks.

3. In a bowl, whisk the eggs and milk together, seasoning with salt and pepper. Once the bacon is cooked, drain and chop.

4. In nonstick casserole pan where you’ve cooked the sausage and onions, add all the tater tots, half the bacon and stir. Pour in the milk and egg mixture, top with shredded cheese, and bake until golden brown. Serve hot by topping with the rest of the bacon.
