Understanding 18/10 Stainless Steel

If you’ve spent any time shopping for cookware, you’ve likely run across an 18/10 stainless steel label. What is 18/10 (18/8 and 18/0) Stainless Steel?

18/10 stainless steel, as well as 18/8 and 18/0, are fractions explaining the percentages of chromium and nickel alloys, respectively, added to stainless steel to reduce rust and enhance shine and durability. 18/0 contains limited nickel and is therefore, slightly less resistant to oxidation, while 18/10 provides the highest amount of nickel producing the greatest resistance to rust, and longest held polish.

Why does 18/10 Stainless Steel Matter in Cookware?

As stated above, 18 and 10 are the percentages of chromium and nickel alloys that are added to stainless steel cookware to enhance performance. But what do they do? Chromium binds to the stainless steel surface and protects it from acid-causing rust that is contained in many types of food. Nickel, meanwhile, prevents corrosion while adding luster on the steel’s surface. 

Stainless steel alone doesn’t provide optimal heating, so alloys are necessary to produce the best cookware. The 18/10 mix combined with American Kitchen’s tri-ply construction (an 18/10 stainless steel interior with an aluminum core and magnetic stainless steel exterior), results in an even distribution of heat across the cookware while your food remains protected from a reaction with the aluminum.
