As a cookbook author and food blogger, I get asked all the time, “What are your kitchen must-haves?” My answer is always the same: A few great knives and a few great pans. These items are essential because they make cooking so much easier. You can’t chop veggies, cut bread, or carve meat without good knives. Same goes for pans. You can’t cook an omelet, brown a chicken breast, or even make a crispy, gooey grilled cheese without good cookware. In fact, a few good pans can actually take your cooking to a whole new level!

So, what makes a pan a good one? Three key things:

1- For me, It needs to be really good quality. That means it needs to be made from quality metals that are safe for my family.

2- It needs to perform. If I want to sear a steak, the pan needs to be able to make that happen. If I want to caramelize onions low and slow, it needs to do that too. A good pan needs to be easy to clean. I love to cook but I’m not a big fan of doing dishes. If the pan is dishwasher safe, I’m thrilled!

3- A good pan also needs to last. That’s super important to me. I can’t tell you how much it pains me to throw away a pan because it just doesn’t do what it’s supposed to anymore. Hate that! One of my pet peeves with most non-stick pans is the non-stick coating wears off. You usually have to get rid of them after a few months because things start sticking. I’d rather spend a little more money and get something that lasts.
